- 2 lbs organic frozen cauliflower florets
- 2/3 cup mayo (homemade mayo is incredible and only takes about 10 minutes to make – I use this recipe!)
- 1/2 red onion, chopped
- 4-6 stalks organic celery, chopped
- 2+ tbsp dried dill
- 2 tbsp organic dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Cook cauliflower in the microwave. Put cooked cauliflower in the large bowl, blend with an immersion blender to desired size, cover and put in the freezer.
Chop red onion and celery and set aside.
Mix wet ingredients/spices: Combine mayo, mustard, dill, salt, and pepper in the small bowl.
Mix dry ingredients: Combine cold mashed cauliflower, chopped red onion, and chopped celery in the large bowl.
Pour the small bowl into the large bowl and mix.
