  • 2 lbs organic frozen cauliflower florets
  • 2/3 cup mayo (homemade mayo is incredible and only takes about 10 minutes to make – I use this recipe!)
  • 1/2 red onion, chopped
  • 4-6 stalks organic celery, chopped
  • 2+ tbsp dried dill
  • 2 tbsp organic dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper


  • Cook cauliflower in the microwave. Put cooked cauliflower in the large bowl, blend with an immersion blender to desired size, cover and put in the freezer.
  • Chop red onion and celery and set aside.
  • Mix wet ingredients/spices: Combine mayo, mustard, dill, salt, and pepper in the small bowl.
  • Mix dry ingredients: Combine cold mashed cauliflower, chopped red onion, and chopped celery in the large bowl.
  • Pour the small bowl into the large bowl and mix.
  • Enjoy!
