$5 Overnight Short Rib

Want to take brunch or dinner to the next level? Look no further than adding short rib into the mix! It takes no more than 5 minutes of prep time and after one bite, you’ll be wondering how you survived up to this point without this delicious $5 addition to your plate.

Ingredients (4-5 Servings):

  • ~3 lbs of short rib (Check out Apartment Chef Tips for recommendations on buying meat!)
  • 1 cup beef broth – (I highly recommend 1 tsp of Better Than Bouillon Beef Base mixed with 1 cup of water)
  • 1-2 TBSP of grapeseed or avocado oil
  • 1 TBSP of kosher salt
  • 2 tsp of black pepper (~20 turns of grinder)


  • 6 quart crockpot
  • 10″ non-stick sauté pan
  • Tongs (fork will work as a substitute)


  1. Heat pan on stovetop set to medium heat.
  2. Once the pan is hot (~3-4 minutes), add oil.
  3. Once the oil is hot (~1 min – use water test method in Apartment Chef Tips), add the short rib to the pan.
  4. Brown all sides of the short rib, using tongs or a fork to flip the meat.
  5. Transfer short rib to crockpot and add 1 cup of beef broth, salt, and black pepper.
  6. Set crockpot to low and cook for 6-8 hours, flipping the short rib halfway through.
  7. Shred or serve whole. Enjoy!

Total time = 6-8 hours or overnight (5 minutes of prep time)


  • Step 6 – Flip them whenever is convenient for you, anywhere in the 1-4 hour mark. I’m a huge fan of cooking these overnight, flipping them right before bed, so that you wake up to a breakfast that is sure to be amazing.
  • Step 7 – I highly recommend serving these atop something to soak up the juices – such as this Cauliflower Faux-tato Salad or bread (especially homemade sourdough, if you’re into that sort of thing). You can also save the juices to make your next round of sautéed vegetables even better.

  • Spices ~ negligible

Cost per plate (4 servings) ~ $4.50


Make this recipe your secret weapon. For amazingly flavorful meat, you cannot do better than short rib. For 5 minutes of prep work, you cannot make a better use of your time.
