$0.10 and 25 Minute Banana Coconut Cookies

Three words. Two ingredients. Banana coconut cookies. You guessed it: all you need is banana and coconut. And $0.10. Once you’ve gathered all that, 25 minutes later you’ve got a batch of guilt-free cookies.
Banana Coconut Cookies Recipe
$0.10 and 25 Minute Banana Coconut Cookies
Equipment
- Baking sheet lined with parchment paper
- Medium bowl
- Small bowl (for icing)
- Sandwich-sized Ziploc bag (for icing)
- Scissors (for icing)
Ingredients
Cookies
- 5 oz banana (~1 large banana)
- 2.5 oz unsweetened shredded coconut (~3/4 cup)
Icing (Optional)
- 1/4 cup cocoa powder
- 2 tbsp pure maple syrup
- 2 tbsp coconut oil
Instructions
- Mash the banana in the bowl with a fork.
- Add shredded coconut and stir to combine.
- Scoop 8-12 cookies onto prepared baking sheet.
- Flatten the cookies with the back of the spoon to about 1-2 cm high.
- Bake @ 350F for 17 minutes or until golden brown on the bottom.
- Once cookies are in the oven, make healthy chocolate icing from $0.50 and 35 Minute Cardamom Squares.
- Pour into Ziploc bag and cut a small hole in the corner.
- Zip up the bag and create cool cookie designs once they come out of the oven!

Step 8 – People make icing look so easy! It’s really tough though. I wish I could say that the icing below was the work of my 3-year-old daughter but fortunately I don’t have a 3-year-old (and I don’t plan on having one anytime soon) and unfortunately these are my masterpieces…

It is not possible to find a better use for a dime than banana coconut cookies. In fact, I would prefer if all dimes were banana coconut cookies! Who’s with me?!

And for the cost of a couple bananas and shredded coconut from the bulk section at the grocery store, cookies can now be on the menu for breakfast, lunch, and dinner.
