$0.90 and 40 Minute Cauliflower Faux-tato Salad

Love potato salad and/or mashed potatoes, but trying to eat less white potatoes?? Cauliflower Faux-Potato Salad to the rescue! This delicious side dish can be used as a savory stand alone or to soak up any escaping juices from your apartment ribs. If you’ve got 30 minutes and $1, you’ve got Cauliflower Faux-Tato Salad.

Ingredients (8 servings):

  • 2 pounds of organic frozen cauliflower florets
  • 2/3 cup of mayo (homemade mayo is incredible and only takes about 10 minutes to make – I use this recipe!)
  • 1.5 tbsp of organic dijon mustard
  • 2+ TBSP of dried dill
  • 4-6 stalks organic celery chopped
  • 1/2 red onion chopped
  • Salt and pepper to taste

For this recipe you will need the following:

Instructions:

  1. Cook cauliflower in the microwave (See tip #1 below). Blend cauliflower with an immersion blender to desired size, cover and put in the freezer.
  2. Chop red onion and celery and set aside.
  3. Mix wet ingredients/spices: Combine mayo, mustard, dill, salt, and pepper in the small bowl.
  4. Mix dry ingredients: Combine cold mashed cauliflower, chopped red onion, and chopped celery in the large bowl.
  5. Pour the small bowl into the large bowl and mix.
  6. Enjoy!

Total time = 40 minutes (20 minutes prep time, 20 minutes for cauliflower ingredients to cool)

Tips:

Step 1 – Purchase frozen organic cauliflower in a steamable microwave safe bag (~$2.50 in Texas). One of my biggest pet peeves is having to remove the florets from broccoli or cauliflower. It takes too long, is too repetitive and there are always way too many bugs hiding in there if you look too closely. Frozen cauliflower is frozen when it is fresh and in-season so you don’t lose out on taste. Plus the 15 minutes of prep time saved is worth the extra $0.50 over cauliflower in the produce section and so far I’ve yet to find any bugs in my food.

Step 2 & 3 – Take advantage of the time it takes for the cauliflower to cool to do some clean-up. Nothing compliments a delicious meal like an empty sink.

Cost:

  • 2 lb of organic frozen cauliflower ~ $5
  • 2/3 cups homemade Mayo ~ $1
  • 1.5 tbsp of dijon mustard ~ $0.20
  • 4-6 stalks of celery ~ $0.50
  • 1/2 red onion ~ $0.30
  • 2 TBSP of dill ~ $0.10
  • Salt and pepper ~ negligible

Cost per batch = $7

Cost per serving (8 total) = ~$0.90

Compare that to the price of any restaurant potato salad and I’m sure you’ll come out on top!
